Brown Sugar-Butter Yam Recipe
This is a long-time family recipe. Easy peasy and simmers itself. No care needed after ingredients are mixed together.
Just like with sex, there is no set recipe. Use your judgment.
- Peel the skin of the yams or sweet potatoes, strip them clean.
- Put the yam cubes in a huge sauce pan and set the fire ablaze, but low, low, low.
- Pour in 2 (or 3) boxes (or bags) of dark brown sugar. Stir it around, coating the yams.
- Cut a couple of pounds of butter, real butter, into cubes and drop them into the sauce pan. Stir around.
This is when patience comes in.
DO NOT COVER! DO NOT STIR!
When someone has the rhythm on their own, you do not disturb their routine, do you? I promise, the yams, brown sugar and butter know exactly how to make love with each other.
Within an hour, the yams will look like this… and the scent will waft around the house making your mouth water:
Feel free to add more brown sugar and butter. You can never have enough of either.
Still, DO NOT COVER AND DO NOT STIR!
Just leave them alone and within another hour or so, they will look like this:
When you serve these, make sure you include the massive amount of liquified butter, in a gravy boat if that helps, so people can slather it onto their potatoes on their plate. There is nothing better than brown sugar-butter lake all under the turkey and dressing.
Or, give folks a separate bowl. Your preference.
I know you are wondering about the calories. If you eat it standing up or on Thanksgiving or Christmas or any of the days afterwards until Tax Day, it is calorie-free!
